GUNDRUK: Benefits in  Animal husbandry

Abstract

In this article I have written about gundruk and its importance on veterinary as a fodder. It is a fermented food made by some leafy vegetables and takes around one month to prepare it and can be used directly by adding It to the feed given to the animal.

Introduction

Gundruk, a traditional Nepali fermented leafy green vegetable, holds significant nutritional value and cultural importance in Nepali cuisine. Its preparation involves a natural fermentation process that enhances its nutritional profile and contributes to its unique flavor.

It can be also used for animal due to is high nutritional significance and flavor.

Procedure of making

Take some leaves of mustard green or cabbage leaves as per requirement.

Wash it properly with clean water and boil it with 90-100C.Let it dry under sun for 2-3days

 

1>Take a plastic container and put the dry leaves in the segmented          manner.(put some dry leaves then push it to make air tight then put more and push) fill the container till brim.

OR

2> dig a pit on ground and cover the floor of the pit with the banana leaves surrounding the pit, put the dry leaves on the pit in the segmented manner and cover the pit till the highest point possible and then cover that with the dry leaves of banana and a layer of soil above the banana leaves and let it ferment for 15-17 days.

 

Thake out the leaves carefully and again dry it by spreading each segment of leaves under the sunlight for 5 days.

Put it in a container and try to make it as air tight.

Veterinary nutritional importance:

it can be used as fodder for animals and it has probiotic properties which can inhance overall digestion of the animal and help in having better immunity as it is also a rich source of Vita C. other advantages are given below as:

  1. Rich Source of Vitamins

Gundruk is a powerhouse of vitamins, particularly vitamin A, C, and K. These vitamins play crucial roles in maintaining overall health and well-being. Vitamin A supports vision, immune function, and skin health, while vitamin C is essential for immune function, collagen synthesis, and antioxidant activity. Vitamin K contributes to bone health, blood clotting, and heart health.

  1. High in Minerals

This fermented vegetable is also rich in minerals such as calcium, iron, and potassium. Calcium is vital for bone health, muscle function, and nerve transmission. Iron is essential for oxygen transport, energy production, and immune function. Potassium helps regulate fluid balance, muscle contractions, and blood pressure.

  1. Fiber Content

Gundruk contains a significant amount of dietary fiber, which is beneficial for digestive health. Fiber aids in digestion, promotes satiety, and helps regulate blood sugar levels and cholesterol levels. Including gundruk in the diet can support a healthy digestive system and overall gastrointestinal function.

  1. Probiotic Benefits

As a fermented food, gundruk contains beneficial probiotic bacteria that support gut health. These probiotics help maintain a healthy balance of gut microflora, enhance digestion and nutrient absorption, and strengthen the immune system. Consuming gundruk regularly can contribute to improved gut health and overall well-being.

Gundruk is low in calories but high in nutrients, making it a nutritious addition to meals, especially for those aiming to manage their weight or maintain a healthy diet. Its low-calorie content makes it suitable for inclusion in various dishes without significantly increasing caloric intake.

  1. Antioxidant Properties:

The fermentation process of gundruk enhances its antioxidant content, providing protection against oxidative stress and inflammation. Antioxidants help neutralize harmful free radicals in the body, reducing the risk of chronic diseases such as heart disease, cancer, and diabetes. Including gundruk in the diet can contribute to overall health and longevity.
